A Note From The Editor
Florida has always kept two clocks.
One belongs to the ocean — a slow tide, unhurried, tied to the light. The other belongs to the room: the hotel bar at nine, the oyster shift at eleven, the last banquette at one. The state's hospitality has been shaped by the tension between the two.
The best places here have learned to hold both. They understand that a great room is not simply designed but conducted — the pace of the bar, the temperature of the light, the length of a pour, the way a host reads a guest and decides whether tonight is a story or a whisper.
Edmond's Honor was built for those rooms. A Tennessee bourbon finished in cognac casks and rounded with Madagascar vanilla, it was made in the belief that whiskey is at its best in remarkable company. Not in every glass; only in the ones held slowly.
This guide is not a ranking. It is an itinerary. A short list of Florida rooms — restaurants, cocktail bars, hotels and the bottle shops that stock what we love — where the whiskey and the hospitality meet on equal terms. Yardbird treats hospitality as a discipline. The bar program moves with the same care as the kitchen, and a well-made Old Fashioned is never rushed here.

Hideaway is one of the few Florida bars that treats bourbon as a solo instrument. The room lets the whiskey say its piece.
